Today i was playing paused the game to go eat and when i came back i was dead and all my stuff was gone how could it have happend?

Are you sure you paused it? Because sometimes I think I pause by pressing E, but.. yeah..

You had either opened to LAN or were on an SMP server.

Hmm that's strange I've heard of macs having that sort of problem but I highly doubt that's the reason.

That why I quit the game when I leave for a period of time or I am in a safe place to AFK. I figure I might hit a key to get the game running again.

what version are you using? somehow, on 1.6.4 / 1.6.2 when you press ESC then mobs can still kill you, however you can't move.

If you were playing in 1.7, then this is actually just a new feature they added when making 1.7. When you press esc, your screen freezes, but things continue to happen in your world. For example, the day cycle will continue, mobs will spawn, and they can attack and kill you when you game is "paused". So if you're playing in 1.7, beware because there is no way to just "pause" your game (always save and quit when going akf).

Macs are 3 times the price of PC's. On topic, you probably pressed e or you are not describing the problem clearly enough.
Do you have a pet? Because if you do, that is probably the issue.
